To start your Bicol Express:
Grab your pork shoulder or belly.
Slice it just like shown — first into large slabs, then into smaller bite-sized pieces.
Mince garlic, chop onion, and slice Anaheim peppers.
Preheat your pan.
Render the pork fat and let the meat brown.
Season with a bit of salt, black pepper, ginger, and onion. Sauté for a few minutes, then add bagoong or sautéed shrimp paste and stir well.
Add one can of Sunlee coconut milk. Mix thoroughly and scrape the bottom of the pan to release all that flavor.
Cover, bring to a boil, then reduce heat to low. This is the perfect time to cook your steamed white rice.

Add the Anaheim green chili peppers and a splash of fish sauce. Stir and cook for a few minutes. Taste and adjust the fish sauce as needed. Once everything is to your liking, it’s ready to serve.
